"Conjuration 11" is the eleventh iteration in a series of experimental IPAs to be used as a playground to try out different things, from hops to dry hopping methods to water and everything in between.

For this beer, we wanted to highlight an ingredient we haven't explored much for our hoppy beers -- yeast! Conj 11 features a new thiol-enhanced yeast from @escarpmentlabs which was bred to release more tropical flavour compounds from hops and malt. We used a big bed of oats and added a hefty dose of Cascade during fermentation to give the yeast as many tools as possible to produce some interesting flavours. It's one of the most food-friendly beers we've ever brewed!

Tasting Notes

This beer is quite different from any of our other hoppy beers we've done. We get big notes of pineapple, passionfruit, lemon, lime and a bit of a farmhouse character.
